Leeds researchers report AI screen for plant-based emulsifier proteins

Researchers at the University of Leeds reported an AI and statistical-physics pipeline that identified nearly 800 plant proteins that could act as emulsifiers. The team screened candidates by modeling protein segments that attach between oil and water, then tested several commercially available proteins. The reported tests matched the model's predictions, with proteins from peas and potatoes proving effective. The work was published in Communications Chemistry.
